Ingredients for these peach crumb bars

This is a winner of a recipe because it comes together in a pinch with just 7 staple ingredients like flour, butter, and brown sugar. We always have a bag (or three hehe) of Domino® Light Brown in our pantry for making emergency chocolate chip cookies and of course it comes in handy when you want to whip up these peach crumb bars too. We love using brown sugar in these bars because it perfectly complements the bright, juicy peaches leaving you with a knock-your-socks-off-good crumb bar that everyone will ask for the recipe for.

Here’s your shopping list:

  • Unsalted butter: Every crumb bar needs a buttery base. We like to use unsalted butter so you can control how much salt goes into your dough, but if you only have salted on hand no problem–just go down on the added salt by ¼ teaspoon!
  • Domino® Light Brown: If I had to pick one sugar forever, it would be Domino Light Brown Sugar. It’s the perfect subtle caramel flavor and adds just the right amount of chew to these peach crumb bars. Plus it’s always soft and moist with a fine texture that bakes up beautifully.
  • Vanilla extract: A splash of pure vanilla extract will elevate the flavor of your bars!
  • All-purpose flour: You’ll use flour to thicken your homemade peach jam and also to bind your crumble dough together. I haven’t tried this recipe with whole wheat flour but it would probably be delicious.
  • Baking powder: Just a ¼ teaspoon of baking powder will give your crumb bars a little lift and keep them from being too dense!
  • Salt: A little salt goes a long way in deepening the flavor of sweets. You’ll use a pinch in the filling and some in the crumble bars to offset the sweetness.
  • Peaches: The only ingredient you might not have lying around are the peaches, but you can snag some at your local farmers market all peach season long. Peaches not your thing? No problem–you can swap them out for any fruit of your choosing in the filling!

Tips for making the perfect crumb bars

These peach crumb bars couldn’t be easier to make, but we’ve made them MANY times this summer so we have all the tricks up our sleeves for you. If you have any questions as you make these feel free to drop them in the comments at the end of the post!

  • Use ripe, high quality peaches: The quality of your peaches will really shine through in the final product, so make sure you’re getting your hands on fresh, ripe peaches.
  • Cook some of the peaches and leave some slices uncooked: This will give you the perfect consistency in every bite with some jammy parts and fresh, juicy whole peaches.
  • Don’t overmix the crumble: The crumble dough should be soft, buttery, and tender so be sure to not overmix it or it can get tough and dry. Only mix until the mixture just forms a dough and clumps together!

How to store peach crumb bars

We like to store these crumble bars in the fridge to keep them fresh for as long as possible. If you leave them out on the counter the cooked fruit can get a little funky and they get soggy. Store them in an airtight container or plastic bag in the fridge for up to 5 days for maximum freshness! If they last that long, of course.

Ingredients

For the peach filling

    • 4 ripe peaches, pitted and sliced
    • 1/3 cup Domino® Light Brown
    • 1 tablespoon all-purpose flour
    • 1/4 teaspoon ground cinnamon (optional)

For the crumb bars

    • 3/4 cup unsalted butter, at room temperature
    • 1/2 cup Domino® Light Brown
    • 2 teaspoons pure vanilla
    • 1 2/3 cup all-purpose flour
    • 1/2 tsp salt
  • 1/4 tsp baking powder

Instructions

      1. Preheat the oven to 350 F and line an 8 x 8-inch square pan with parchment paper on all sides. Set aside.
      2. First, make the filling. Pit the peaches and slice them into ¼ inch thick slices. Place a heavy bottomed saucepan over medium heat and combine ⅔ of the sliced peaches with the brown sugar, flour, and cinnamon (if using). Stir with a rubber spatula and cook for 10 minutes or until the peaches have fully broken down and formed a thick jam. Add the uncooked peaches and stir to combine. Set aside.
      3. Next, make the crumb dough. In a stand mixer fitted with the paddle attachment, combine the softened butter, Domino® Light Brown, vanilla, flour, salt, and baking powder. Mix on low speed until the mixture starts to clump together and form a thick dough, about 3 minutes, scraping down the sides of the bowl as needed. It will seem crumbly at first and like it won’t come together but it will!
      4. Press about ⅔ of the mixture into the prepared pan, using your fingers or the bottom of a measuring cup to pat it into an even layer. Spread the peach jam over the bottom crust all the way to the edges. Sprinkle the remaining topping in small and big clusters all over the peaches.
      5. Bake until the peaches are bubbling and the top of the bars is golden brown, 35 to 40 minutes.Place the pan on a cooling rack and allow the bars to cool completely before slicing and serving!
